Mini Sweet Potato Casseroles

Ingredients

4 sweet potatoes

4 tablespoons butter, softened

Pinch of salt

1 egg, beaten

1/2 cup milk

Marshmallows

1/4 cup Kernel Season’s Caramel seasoning

Instructions

Boil sweet potatoes in water until fork tender. Remove from water and allow to cool before removing the skin. One the skin is removed; mash the potatoes together with the salt, egg, milk and Kernel Season’s Caramel seasoning. Next, fill mini ramekins with the potato mixture and top with marshmallows. Bake at 300 degrees for about 25 minutes or until marshmallows are slightly brown.
